Avocado Coriander Dressing

Fresh, creamy, and the most beautiful colour green, this dressing
really adds some zing to any salad!

Ingredients

1 bunch coriander
2 garlic cloves
1 avocado
60ml olive oil
1 tbsp apple cider vinegar
1 tbsp lime juice
60g Greek yogurt
80ml cup water
1 tsp salt
1/4 tsp pepper
pinch ground cumin

Directions

Place the coriander and garlic in the work bowl and run for 20 seconds.

Add the remaining ingredients and run for 30 seconds.

Store in the fridge in an air-tight container for up to 1 week. This can be used as a dip for vegetables or as a salad dressing.
