Mango Lassi by The Coconut Collaborative
1/2 Frozen ripe mango
4 Tbsp The Coconut Collaborative Mango & Passion Fruit Yog
1 Tbsp lime juice (plus more to taste)
1-2 tsp maple syrup
1 Passion Fruit
Handful of ice
Add mango coconut yogurt, ice, passion fruit, maple syrup and lime juice to a high-speed blender. Blend on high until creamy and smooth, scraping down sides as needed.
Taste and adjust flavour as needed, adding maple syrup for a bit of sweetness (you may not need any).
Serve as is or swirled with additional coconut yogurt. Fresh chopped mango, shredded coconut, and lime wedges also make a beautiful garnish.
