Sweet Pepper Marinara
Juicy red bell peppers not only add depth and richness to traditional tomato-based marinara, but also loads of beneficial nutrients.
Ingredients
2 tbsp Olive Oil
52g Sweet Onion, chopped
2 Red Bell Peppers, large, chopped and deseeded
4 cloves, Garlic
1 tbsp Italian Seasoning
1/4 tsp Crushed Red Pepper
800g Whole Peeled Tomatoes
1/2 tsp Sugar
1 tsp Salt
Optional: Basil, Parsley or other herbs to garnish
Directions
In a saute pan over medium heat, add olive oil, onion, red bell pepper, garlic, italian seasoning and crushed red pepper and saute for 3-5 minutes until softened.
Transfer sauteed ingredients to pitcher.
Add half the can of peeled tomatoes, sugar and salt to pitcher. Cover the pitcher with the pitcher lid and blend on MEDIUM.
Add remaining half of canned peeled tomatoes and pulse until desired consistency is reached (chunky to smooth).
Pour mixture back into pan and simmer for 20 minutes.
Serve over veggies or pasta.
