Green Goddess Dressing

Herby, fresh, and creamy, this dairy-free version of the famed dressing livens up salads, sandwiches, veggie platters, and so much more.

Ingredients

164g Cashews, raw – soaked in hot water for 20 minutes, then strained
240ml Water
80ml Olive Oil
2 tbsp Lemon Juice
3 Garlic, Clove
128g Coriander – lightly packed, stems removed
128g Parsley – lightly packed, stems removed
3 Green Onions
2 tbsp Vinegar, white wine
1/2 tsp Salt
1/2 tsp Black Pepper, ground
