Watercress and Herb Soup
Watercress is an underrated green that is packed with nutrients and gives a nice spicy zing to your soup. Changing up your greens is a great way to incorporate different vitamins and minerals into your diet, and enjoying a bowl of hearty soup is an easy and delicious way to do it!
Ingredients
- 100g Watercress, raw
- 1 Red Potato, small
- 2 Garlic, clove
- 1 tsp Thyme, dried
- 1 tsp Rosemary, fresh
- 1/2 tsp Sea Salt
- 1/4 tsp Black Pepper, ground
- 230ml Almond Milk, unsweetened
- 470ml Vegetable Broth, low-sodium
Directions
Blend all ingredients in the blender until smooth, pour the soup into a pot, and heat over the stove until warm.
