Chicken Meatballs
Fresh, flavourful and a little lighter - though no less satisfying - than your traditional meatball!
Ingredients
450g boneless chicken thigh meat
30g parsley
16g cup mint
3 cloves garlic
½ onion
1 tsp Italian seasoning
1 tsp salt
½ tsp pepper
Directions
Place the garlic and onion in the work bowl. Run until minced.
Add parsley and mint into the work bowl. Run until minced.
Add seasoning, salt and pepper to the bowl and run for 5 seconds.
Transfer all of the contents into a mixing bowl.
Place half of the chicken into the work bowl at a time and pulse for 10 times. Transfer to the bowl with the rest of the mixture and repeat with remaining chicken.
Add 1 egg to meatball mixture and mix to combine.
Form the mixture into 5cm meatballs.
Heat oil in a pan over medium heat. Place the meatballs in the pan and cook through.
Serve plain or with sauce (like tomato).
