Feta and Roasted Cherry Tomato Dip

If flavour is what you’re after, this succulent, savoury dip delivers big, with tart tomatoes, salty feta, and punchy garlic screaming “umami” in every bite.

Ingredients

  • 300g Cherry Tomatoes
  • 5 Garlic, clove
  • 3 tbsp  Olive Oil
  • 1/8 tsp Salt
  • 1/8 tsp Black Pepper, ground
  • 2 cup, crumbled Cheese, feta
  • 2 tbsp Lemon Juice
  • 1/2 tsp Italian Seasoning

Set oven or air fryer to 200°C. In a bowl, toss tomatoes and garlic in 1 tablespoon of olive oil and sprinkle with salt and pepper. Transfer to a baking sheet or air fryer basket and roast for 15 minutes.

Set up the Food Processor Work Bowl and attach the Chopping Blade. While the tomatoes and garlic cook, add feta, remaining olive oil, lemon juice, and Italian seasoning to the Food Processor and process on until smooth.

Add in 75g of roasted tomatoes and process using the WHIP program until desired consistency is reached.

Transfer the feta blend to a serving bowl and top with remaining roasted tomatoes.
