Veggie Fritata

A delicious and healthy veggie-filled breakfast to start your day.

Ingredients

2 small courgettes
6 eggs
2 tbsp unsalted butter
60ml heavy cream
2 shallots
1 tsp salt
¼ tsp pepper
115g cheddar cheese

Directions

Using the shred disc, shred the cheese and set aside.

Cut each courgette in half lengthwise and using the shred disc, shred both courgettes.

Place the shredded courgette on top of a few layers of paper towels and wring dry to remove the moisture from the courgette pieces.

Remove the shred disc from the food processor and replace with the chopping blade. Add the shallots to the work bowl and run for 10 seconds until the shallots are finely diced.

Heat a pan over medium high heat. Add butter to the pan.

Once the butter has melted, add the shallots, courgettes and 1/2 teaspoon salt to the pan. Let it cook for 5 minutes.

While the courgette is cooking, add the eggs, cream and 1/2 teaspoon salt and pepper to the work bowl. Run for 20 seconds to whisk the eggs.

Pour the eggs into the pan with the courgette and top with shredded cheese.

Reduce the pan heat to low, cover with a lid and cook for 20-25 minutes until eggs are set.
