Vegan No Bake Cherry, Coconut & Pistachio Slice

This is the perfect treat to satisfy those sweet cravings without feeling guilty. This healthy Vegan No Bake Cherry, Coconut & Pistachio Slice was created by @emmiebhungry on Instagram!

Ingredients

1 can of cherries
2/3 of the can of desiccated coconut
2 tbsp of melted coconut oil
3 tbsp of coconut flour
1/3 of the can of pistachios

Topping

100g Vegan dark chocolate, melted (Although if you want to indulge, feel free to use more!)
Pistachios, to taste

Directions

Blitz all of the ingredients except the pistachios in the order listed.

Stir through the pistachios and pour into a tray and refrigerate for 4 hours.

When firm cover with melted dark choc and more pistachios. Pop it back into the fridge to set.

Serve and enjoy! This recipe will keep in the fridge for a week, so store away and enjoy whenever you get those cravings.
